Well, better late than never I guess. I went ahead and made the meringue cookies because I can't sleep. My older daughter is still up and she used the pastry bag to shape them, I usually just drop the dough on there with a spoon. My son is still up and the guy who lives here just got home so they will be eaten up within a few minutes. This makes four dozen and it's really easy. A lot easier than you would think when you think about meringue.
3 egg whites
3/4 teaspoon vanilla
3/4 cup sugar
1/4 cup baking cocoa
Beat the egg whites and vanilla until soft peaks form. Add the sugar a few spoonfulls at a time, beating until stiff peaks form. Gently fold in the cocoa. Drop by spoonfulls onto a parchment lined cookie sheet or pipe with a #8 large star tip. Bake on 300 degrees for 25-35 minutes.
Yummy, and they literally melt in your mouth!
