Ryan Adams' Heartbreaker. (That's Ryan Adams, not Bryan Adams). Not really any one song, the whole thing. When I heard that album in college, it shaped my musical tastes a lot and served as a gateway into exploring types of music I hadn't appreciated enough previously.
