Recently, I went to the fine dining restaurant which my friend manages and he set us up with a special chef's tasting. We started with bread and a candle made of bacon fat and chicken fat, with frills of seasoned lamb fat. As it melted, we sopped it up with the bread. The salad was the perfect size for a 10 course meal, about 3 bites. It was iceberg lettuce, foamed blue cheese, cashews, and little pearls of balsamic vinegar.

That let me know about the chef's interests, layers of texture and flavor which open up as you chew the food. The dishes continued in this manner, through 4 fish courses, duck 5 ways, and a trotter terrine made especially for us. Everything tasted fantastic, and used both familiar flavor combinations and surprising new combinations in different dishes.

The only issue they had was portion creep. As we got subsequent courses, they began to look less like tasting plates, and more like entree plates. My friend gave up after 6 courses; I managed to put down 3 more. In the end, I missed out on dessert and a scotch egg. I regret that deeply, but portioning is one of the most complicated parts of restaurant management, and requires everyone to be on the same page. 4.5 out of 5.

A nutella sandwich (yes, I'm aware of the palm oil, nutella is the only thing I eat with palm oil in it, because it's delicious.) Although I did also have a coconut curry an hr ago.
