So here is the recipe:
Ingredients:
Enough number of potatoes, preferably medium sized
A cup of rice
An onion, chopped finely or grated
A chicken breast cut into tiny pieces or about 200 gr of ground meat of choice (You can skip this if you're not a meat eater)
A generous amount of olive oil, no need to measure it but make sure it's more than at least 2 tablespoons.
Salt (2-3 teaspoon), pepper (1 teaspoon), turmeric powder (1 teaspoon)
A bit of chopped fresh parsley
2 tomates cut into tiny pieces or canned tomatos/pure tomato sauce
1 tablespoon of tomato paste
So first of all preheat the oven.
Put the rice and half a cup of boiled water in a large bowl, set aside.
Peel the potatoes and carve them in order to make them look like little bowls.
Once the rice sucks all the water in add the rest of the ingredients except for the potatoes and mix well.
Fill the potatoes with the rice mixture.
Place them in an oven-safe pot or tray. I put between the filled potatoes the potato pieces that are left from carving.
Add a cup of boiled water to the pot/tray.
Bake them for about 45 min.
Nom it! I like to have it with greek yogurt.
You can also fill other veggies like peppers or eggplants or even tomatoes. If the filling ends up too much you can make soup with the rest including the left over potatoes. Just add boiled water and more salt and cook it. This is optional but once everything is cooked and soft you can mix half a lemon's juice with a tablespoon of floor and slowly add it into your soup (you may need to add water from the soup to the lemon-flour mixture to make it thinner before doing that), simmer another 10 mins.
