I'm rather fond of the ARP 2500.

Probably its most famous use was on Funeral For a Friend, the opening of Elton John's 1973 album Goodbye Yellow Brick Road. Engineer Dave Hentschel played it. And unless I'm mistaken, it was also used to create the "sax" sound in Bowie's Suffragette City.
