This is quite simplistic. I'll be posting a few sets of languages, out of the set, which one would you like to know? The dialect will be the most spoken unless I specify otherwise.

all three are cool, maybe German if I had to pick just one

all three would be fascinating.Low German, and Frisian,are fascinating because they are close cousins of English. And Estonian is fascinating because of its LACK of kinship to English (or to most any other European languages).

Frisian if I had to pick one.

Estonian is closest to Finnish. The Estonian and Finnish anthems have the same melody. Watching the Olympics made me attentive to national anthems of the winning athletes.

I'll be assuming that you keep the languages you already known, and that you will be able to speak, read, and understand the generally most common.

4. Cantonese, Japanese, Korean

Japanese and Korean are increadibly hard to learn, and since both are major economic players. And cantonese, since it's a branch of chinese

I don't think any of these will become the globally dominant language because of the way their alphabet works (basically they are super hard to simplify and use on computer systems if i remember correctly)
But since they are pretty big and i like anime, it would be semi useful to learn them and hella neat to show off you anime translation skills

Its an oddly framed question..

His choices are grouped in ways that have no obvious logic (or one group maybe logical, but the logic doesnt apply to the next group of choices).

I kind of envision the question to mean "if I offered you three magic pills, and each pill would cause you to instantly be proficient in both reading and writing a particular language which of the three magic pills would you pick?" That way the relative difficulty of learning the language wouldnt matter- it would just come to you instantly by magic. That way,say Japanese, would be just as easy for an American English speaker, as say Spanish. So which do you want? A "Spanish pill?", a "Japanese pill", or a "Bantu pill"?
