A lot of people is not good for cats because their digestive system is designed for meat only.
Cat livers do poorly at processing things like vegetable oils.
Most information focuses on what NOT to share with your cats.

Above link is a good example of what is said here,

We spoke with Dr. Elizabeth Colleran, President of the American Association of Feline Practitioners (AAFP), who said that the list of foods you can never feed your cat is a lot smaller than most people think. Cats should never have onion, garlic, kelp, grapes or raisins, sugary treats, chocolate, and alcoholic or caffeinated drinks, even in small doses.

However, you'll find many veterinary lists of dangerous foods are longer. The truth is, if you examine the fine print, some foods on these warning lists can be safe for your cat -- but only in small doses. And a good rule of thumb is that human food should not make up more than 15 percent of a cat's diet.

If it is pain cheese and not some kind of specialty spiced flavor or something, it would be okay to give her a little bit to try. Once beyond kitten age most cats become lactose intolerant so that is why a trial is needed.

Salt level in the turkey is an issue if it is packaged turkey slices or such. Cats need far less salt than we do. I do not know what a safe measurement is for a given length of time eating it.
Too much salt can cause electrolyte imbalance which can be a serious problem, sure there would be vomiting and diarrhea at that point but too far out of balance can be deadly.

If you have cooked an actual turkey, or chicken, plain, that's going to be okay.

I don't see whether you tried moistening the dry food.
Put some room temperature water on it and let it soften up, then see what happens.

Would be best if she would let you look at her mouth to check for tooth and gum problems which could be affecting her eating. But if she fights that idea there is a point where it is not worth spilling that much blood trying to do so.
