I've been thinking for a while of doing a build in a case that calls for mini-ITX motherboards. I just saw a YouTube video that showed such a build, but the memory sticks were the same kind you'd see IN A LAPTOP.

Do ALL mini-ITX boards use laptop-style memory sticks?

Most mini itx uses standard RAM. I would recommend Corsair Vengeance LPX for a small form factor as it has good performance and a low profile. At least 2400 Mhz for a Ryzen build.
