Since I lost my job at the glorious sweatshop (after reporting the unwashed carts issue to OSHA, they threatened and bullied me away, so it's like good riddance to that), I've been mostly keeping a stew going in a crockpot. It's mostly having 15 bean soup mix, extra lentils, rice, cabbage, brussels sprouts, potatoes, onions, and frozen veggie mixes from Dollar Tree. Also add oils, like canola and olive, and seasonings like curry, foti, salt, pepper, and cilantro. Gets a little tiresome after a while, but I'll eat a few avocados or make peanut butter & honey for meals to space out the variety so as to reduce meal fatigue.

i heated a jar of matzo balls in savory veggie juice, added some onion and garlic and pepper, a bit of ketchup, halved brussels sprouts.

Put some Costco (kirkland) panko breaded shrip in the air fryer a couple nights ago - better than the tempura battered ones, but not quite as good as the seasonally available coconut battered ones. I'd buy these ones again before the tempura ones.

Cooked up a couple chicken breasts and frozen stir fry veggies yesterday and put leftovers in the fridge so I'd have something healthy to eat last night.. then ate chips & chocolate when I got home. :lol: Guess I'm having chicken and veg for lunch!

Made an omelette with 2 chicken breasts, green onion, 3 small tomatoes, 5 eggs, 4 strips of bacon, havarti and s & p. Had some with a couple slices of thin sprouted grain toast. Might eat leftovers later, might toss it in the fridge and eat it tmw.

I’m too tired to cook anything substantial.
Cranberry juice and whole wheat toast with vegan butter.
Ate some junk food my son left.
Potatoes chips and white cheddar popcorn.

Same thing I've been eating for over a month now, a bean and rice stew. Kept a crockpot going, keep adding more ingredients to refill it each day. When I can go shopping on Saturdays and can afford to, I'll buy more frozen veggies from Dollar Tree and more lentils. Potatoes and onions from wallfart also are goodish.
