In the Twelve Days of Christmas, why is it in the song, there is so much emphasis on the five golden rings like it's the most special gift the singer's true love could have given them?

I think it's just to make the tune more interesting instead of just having the same rhythm for each line. But I don't know, there could be a meaning to it.

It doesnt mean a blinkin thing. Its like a bridge- as suggested above- to make the song more interesting.

Its the least baffling part of the song.

Whats up with the "lord's a leaping"?

Are they from the House of Lords?
I can understand getting a charge out of watching Nuyerev or Micheal Jordan leaping. But why does his true love get a charge out of watching a bunch of legislators in white wigs leaping?

Explain that!

Are you saying that you never get annoyed with legislators, and wouldn't appreciate having them jump at your say so?

Three Rings for the Elven-kings under the sky,
Seven for the Dwarf-lords in their halls of stone,
Nine for Mortal Men doomed to die,
One for the Dark Lord on his dark throne
In the Land of Mordor where the Shadows lie.
One Ring to rule them all, One Ring to find them,
One Ring to bring them all and in the darkness bind them
In the Land of Mordor where the Shadows lie.

Perhaps the melody was borrowed from an older song.

Snopes says that's false. ^^ It certainly sounds false (like anything where a perfectly innocent word is supposedly an acronym/initialism is almost always false, the idea is just too convenient; nonsense songs are nonsense songs!) There is a Christmas song with that sort of symbolism (not the one that the Snopes article mentions) which is explicit about it, I wish I could remember the name but they're very different.

Wiki him claim that this fellow changed the music at "five gold rings" onwards.
