my wife left her cigarettes at home and I lit one up and had a couple drags off it.

I guess I'm thinking that one every so often can't hurt, right?

Some people seem to be able to just smoke at weekends or with a pint. I'm not one of them.

That could depend upon what you mean by "hurt", but no, there is probably no great physical harm done by just "one every so often".

I just don't understand how, after 7 months smoke-free, the cravings could start back up again as if I just quit yesterday.

Although not for exactly the same reason, the same is true for the alcoholic who again tries "just one or two". The body knows the effect it will get, and the mind (as affected by the emotions) has either forgotten or has conveniently dismissed its memory of the ultimate harm.

what might actually help too is if I took my wellbutrin as prescribed
