I'm one egg short of a pound cake

I know that sounds like an insult, but it's the truth. I wanted to make a pound cake for dessert but I only have four eggs. I thought I had five. I have no car here and it's raining so I can't walk to the store and get more eggs. No neighbors are home to borrow an egg from.

I suppose I will look for a four egg recipe for pound cake. Or maybe something else. Possibly sugar cookies, that's quick and easy.

Well, I just remembered as I was typing that, that I cannot use all the eggs because I need one for the cornbread. I can use three eggs. That's not going to make a pound cake! Sugar cookies it is for dessert then. Unless I find something else. I have to look in the pantry to see what kind of baking stuff I have. I have some coconut and coconut milk also that I want to use. Mayble I'll make a coconut cake. I don't know.

For supper I am making chicken and dumplings, butterbeans, sweet oven corn bread, and now, sugar cookies instead of poundcake. I think I'll make a pitcher of tea too.

Thank you! I think it will be. Everybody here likes chicken and dumplings and a few of us like butterbeans. All of us like cornbread.

I can't decide what to make for dessert though.

Any suggestions?

I'm sure one egg wouldn't make a difference. You could always use a *little* more baking powder or some egg replacer (like ground flax seed).

I have this great recipe for a pound cake that uses fewer eggs...but it's at home and I'm not!

and you needed it yesterday. But if you still want it I could look it up later for you?

It was from Southern Living magazine and turned out really well.

Mississippi Mud cake. It's like a thick, fudgy brownie type cake, iced with marshmellow cream and sprinkled with coconut and pecans. Yum!
