I still have meatballs and rolls to make sub sandwiches, and I still have stew. I think I need to make something else tonight as well though. Suggestions?

How about a nice cheese salad?

Taken at a café in Puerto de la Cruz in Tenerife, Canary Islands, Spain.

It was absolutely delicious. The café itself was a bit tucked away but it was very reasonably priced and the salad, as I said, was brilliant. I can't think the salad would have been more than £3.50, tops, although I obviously don't have the menu to hand.

So, what do you think, OliveOilMom? Just a suggestion. :)

That salad looks great! I love salads and so does my youngest daughter, but unfortunately nobody else will eat them around here :-(

Mac and cheese as a side is a good idea. I'm going to make a different main dish though. W have had the meatballs leftover, and been snacking on them for six days, and the stew since Monday. So I want to make another entree. I'll keep the meatballs for a couple more days and the stew for several, so we can eat on it, but we need a change. Chicken? Pork chops? What? They won't eat fish though. There is always pizza, but I don't have time to let the dough rise.

They won't eat any fish? There's quite a lot of fish I won't eat but I can usually find something I do like.

You could always have a fried breakfast if you're desperate.

What about sausage and chips?

Fried chicken is an idea, as is corn on the cob, but it's too late in the day to start the peas for supper tonight.

No, they don't really eat any fish. Breakfast for supper is a good idea. I could make scrambled eggs with cheese, grits, cooked apples, bacon, sweet milk gravy, and biscuits. I could buy a canteloupe too. I'd like tomatoes but this time of the year they have no flavor, so I'll do without them.

Two of the kids won't eat sausage, so sausage and potatoes is out. I do like sausage, peppers and onions, but I have to cook something else for the others who won't eat it.

I just thought of fetuccine. That might be good. Maybe make some chicken in the oven to go with it.

I want something, but I don't know what I want, and I hate it when that happens.

Maybe I should get out my Frugal Gourmet International Cookbook and pick a country and make something entirely new. What do you think?

Hmm, if the meatball subs are leftovers, the easiest thing to do would be to make pasta, then make spaghetti and meatballs, then turn the sub rolls into garlic bread, then you can add mozzarella to half of the garlic bread to make it cheesy garlic bread.

Another idea, if you're up for making dough, or if you got a grocery store or pizza restaurant that sells dough balls for a reasonable price, you could always make a pizza. Pretty quick once it's rolled out, and quite filling.
