Boneless skineless Chicken recipes?

I eat boneless skineless chicken a couple times a week. I usually put it in the oven spiced, maybe dredged in flour, with some butter on top. I've also boiled it, and pan cooked it. I've made it with bread crumbs. there was a really yummy recipe I used to make where you pound the chicken, mix spinach with cream cheese, and put it on the chicken, roll the chicken up, dip it in mixture of egg and milk, and then bread crumbs. It was delicious, but a lot of work.

I need new Ideas.

Stir frys and curries are good ways to use lean chicken without bones and skin as the preparation won't dry the meat out. I like Thai curries with coconut milk - you don't even need to saute the meat first, just put it in the coconut milk sauce to cook gently. I'm sure you can find lots of Asian stir fry recipes.
