Why is that some parents have all boys, all girls or vice versa and yet still have granddaughters?

Because gender is random and there is no rule that just because all your children are one sex doesn't mean all your grandchildren will be the same.

There can be odd coincidences though. I know a family with 3 daughters and 3 sons. The 3 daughters all had daughters (actually one each but no sons) and the 3 sons all had at least one son (but I think they did have a couple of daughters too).

It means only that they have all sons, all daughters, or a son and daughter and yet they have granddaughters. There is no other meaning, expressed or implied.

Do you have something against having all grandchildren of only one sex?

This is probably not what the OP is talking about but parents sometimes chose to have kids that are a certain gender by adoption or abortion. I think there was at least one country that at one point highly discouraged parents from having girls because boys were considered much more valuable to their labor force.

It's pretty easy to increase the odds of having a boy / girl, based on how you time the conception.

Worked for me.
