I love most carols, these three come to mind at first thought:
1. Carol of the Bells
2. O Come All Ye faithful
3. O Holy Night

Christmas Time is Here (Peanuts/Charlie Brown)

If pop songs are allowed, Gordon Lightfoot's Circle of Steel, and Fairport's cover of Nothing Rhymed, which isn't even a Christmas song, but should be.

I tend to think of Christmas carols as being specifically Christian songs (or possibly pre-Christian pagan songs too?) rather than modern secular favourites, so my favourites would be:

1. In Dulci Jubilo
2. The Holly and the Ivy
3. God Rest Ye Merry Gentlemen
