I'm no musician, but I've admired the guitar work in the EATB album Flowers for a while now, though the album itself doesn't gel for me:....

(He's the guitarist in Racer-X btw, he also did a version without the band I think.)
OOOH! I just remembered Judas Priest... they have some mad riffs.
Dragonforce have so many riffs in one song, they could split them and they would have like 10 tracks.

Anything Trivium, but my favorite solos are probably in Torn between Scylla and Charybdis and The Crusade, and Declaration to a lesser degree.
