someone shows you something (lets say online)
you like it very much, i.e. it makes you happy/excited
you want to tell them your response

how do you tell them or show them without sounding very childish?
If you go for the adult-ish words, then it doesn't sound very happy/excited.
see:
"Woah! I LOVE this and it makes me excited. ..."
vs.
"I'm glad you shared this with me. I like it very much."

or also, how do you know who is or is not okay to write to in the first way?

neither choice sounds childish to me. the first is something an effusive person would say. the second is more reserved., though still quite positive and supportive. i tend to be more reserved myself, but have noticed that effusive people tend to be more popular. if i were you, i'd say it the way i was most comfortable saying it.

If someone doesn't like my absolute squee reaction to something, they can shove it. I'm ridiculously childish when I'm happy and in a good mood, and I do actually tend to be a bit bouncy and make squeeing-like noises.

i don't think I have a comfort evaluation mechanism for words.

the first way is more like how I feel, but apparently we are generally not actually supposed to tell people how we feel. that is at least what i gather from most of my experiences.
