I am 23 and unfourtantly I am on the short side for a guy standing at 5ft 8 1/2.

I weigh roughly 144 lbs but I am thinking of putting on more weight. I probably could be much heavier if I wanted too be.

Given my height and my age what do you think would be my ideal weight?

guys get 110# for the first five feet and then 6# per inch, so 151#, give or take 10#, would be ideal. you're perfectly fine where you are. at least that's what they taught me in medical school.

If you want to gain weight, make sure to gain it in muscle and not fat! For your height you're in a healthy weight range.

Pick up heavy logs and rocks? There's bodyweight exercises, but I find those tedious.

There is no such thing as "ideal" weight, unless you're competing in weight divisions. Check your body composition.

Also you can gain weight in muscle by eating a lot and utilizing your muscles by progressively stressing them.
