In more depth what does it mean in any context when someone says "you only get so many chances in life"?

That if a great opportunity is offered to you then you should go for it.

Why don't some people go for great opportunities?

Fear - uncertainty ("What if it doesn't work out?", "What if something else comes up that I would have liked better?", etc)

Great opportunities don't always come with a big label saying "Great opportunity". Sometimes it takes other people with more experience to point out to you that an opportunity you are uncertain about is actually a really good opportunity.

You take a chance when it's presented to you, and try to not look back and over think what you did.

For instance, you only get so many chances to meet someone to date that might be a person you could end up marrying. Later in life you keep thinking, 'if only I had dated chloe a little longer'.

It means that if you don't take an opportunity when it comes up, there is no guarantee that you'll have the same opportunity again. It basically means live life to the fullest because you only get one shot at it.

It means to take every opportunity that comes your way, because you only live once.
