An earlier thread about my hometown, Austin, Texas evolved into a long discussion about barbecue places. There are obviously some 'cue nuts around here besides me, so how about a thread about all things BBQ- how to, cooking styles, pits, your favorite 'cue places...etc.

I'll start. Hi, I'm BubbaHoTep and I'm a barbecue addict. Have been my whole life. Here are some pics of a brisket I smoked for the superbowl:

12lb trimmed brisket from the grocery store.

Apply the dry rub- salt, pepper, chili powder, brown sugar, and whole bunch of other stuff. The exact recipe is top secret! :D

Into the smoker.

Close the door and let the smokey magic happen for 20 hours. Yes, 20 hours.

The result is this thing of beauty.

Perfect black crust from the dry rub and a nice smoke ring. Life is good!

Wow, man, looks like you know how to make some brisket there.

Last summer I ended up barbecueing ribs at least once a week, but it's kind of lame when you're only cooking for yourself. They don't even make the seasoning mix I used to make it anymore.

Yeah I'm in Texas to. BBQ in Texas is usually beef brisket....mmmmmmmmm! :) Pork
ribs are nice to.

Briskets shrink a little. I'd guess a 12 pounder ends up around 10-11 lbs after cooking.

Any sausage fans around here? My favorite for many years has been the Southside Market in Elgin, Texas. Meyer's sausage, also in Elgin, is fantastic too. I love their garlic links, in fact I prefer them more lately because they're less greasy then Southside.

What are y'alls favorite sausage places, rib places, brisket places?
