Coconut oil is in the news today, so I thought I'd share my experiences.

I've been deep frying with coconut oil for the past six months. In that time I've had two screening tests for HDL/LDL/triglicerides and my numbers have been good. I've dropped a few pounds down to 108, but that is due to more exercise during the summer. The doctor told me that I shouldn't lose any more weight.

Presto 05470 Stainless Steel Electric Deep Fryer, Silver Little 1 quart deep fryer I've been using.

It's almost certainly healthier than most of the disgusting vegetable oils used to deep fry, like sunflower oil.
I use it for deep frying too, but for everyday uses, I tend to stick with butter and olive oil for colder dishes.
