I know it fattening, can you still have it if you eat a little bit at time? I’m trying to watch what I eat, cuz I ate toooo much ice cream (I hate depression eating & stress eating too) I’m craving potato salad since 4th of July, I used to have it at my family 4th of July party, we had BBQ food & margaritas.

You can make it healthier by adding more veggies.
Diced bell pepper, chopped onions, a bit of diced garlic and a few diced steamed carrots.Go light on the mayo.I add just a small spoon full of mustard and horseradish for zip.For those who really like it spicy a dash or two of hot sauce.

I miss good potato salad. The shop bought potato salad is,to put it bluntly,crap. My mother made great potato salad ,and so did my wife.
