I can only speak for myself, but when I did it it was to see if there were any aspects of a previous relationship that she liked and perhaps missed. Say a previous boyfriend used to give her massages; I could learn to give massages. Little things like that.

They want to know if you're divorced, which would suggest you might have financial trouble. Even if you haven't been married they want to know if you are single and if you've had long relationships or short relationships in the past. That helps them guess whether you have been sexually active and whether you'd be interested in a hookup instead of a longer commitment.

Also a person's strengths and weaknesses in a relationship--whether they can communicate well and resolve differences, or cycle through the same problematic cohabitations.

It helps to know if she is completely over the past relationship or not.  If she hates him with all her heart, mind and soul, it is just as bad as if she still loves him and wishes they could get back together.  Either way, she's still thinking more about her ex than she's thinking about you.

i (fortunately) never ended up dating her but i can remember all the times, hanging out with my LO, half of our conversations would revolve around how angry she was at her exes and how awful they were. at the time i was still head over heels with his chick but even then i felt uneasy that she was still obviously thinking of them 24/7

I think it's a matter of people don't want to hear long, unrequested monologues on previous relationships, but generally people do have at least a degree of curiosity about how things have gone previously.

Also, I think that noting how someone accounts for the failure of past relationships may be a factor: could be used as a foreshadowing of how a potential partner will handle problems in future relationships.

I would accept that my lover is friends with her ex-boyfriend—unless they are actually more than “just friends.”

It all really depends on the nature of that relationship.
