Another is a street food from India called Aloo Tikki.

Many years ago, I lived and worked in Houston. There was a vegetarian Indian restaurant nea where I worked that had this. I used to get it two or three times a week.

There are many different recipes for it.

The basics of how it is made is to mash boiled potatoes, mix in the spices, form into patties, and deep frying.

Try researching Cajun or Creole, Emeril Lagasse has a few books with some basic recipes for Southern Louisiana cooking.
