I've seen Serial Experiments Lain and Gunslinger Girl. They're both very well done, but S.E. Lain is pretty creepy and Gunslinger Girl is really sad. I was thinking about giving both of them another chance, though.

Seconded. The anime series is pretty good on its own, but if you want to become a hardcore fan you'll need to watch the OVAs and/or read the manga.

I must warn you: it is very violent and contains foul language, and the OVAs and manga contain imagery that some people may find offensive (*cough*Millennium*cough*).

If you like Hellsing, another good one is Trinity Blood. There are three versions, each one telling separate stories than the others: anime, manga and novels. I personally prefer the anime and I kind of like the manga, but I have too much trouble sitting still to read the novels.

Haibane Renmei's just great. Good for you for picking it up.

Can't wait until the 2nd season of Gunslinger Girl comes out.

Something else you should look into is Princess Tutu. Very imaginative. Plus Princess Nine.

Based on what you've posted, I'd recommend Hare Nochi Guu, Keroro Gunsou/Sgt. Frog (before a certain point where it became nothing but fanservice, that is) and Hayate the Combat Butler. All very funny shows with endearing characters, with random humor and awkward situations abound.

Aaaand, even though it's a much different feel than the stuff you've mentioned, just because I'm amazed by this show right now I'm gonna go ahead and mention Baccano!. :D Eccentric but lovable characters, wacky humor, violence that ranges from comedic to horrifying to somewhere in between, a clever plot and way of conveying it... yeah, it's nifty.

I forgot to mention Figure 17. It's also the only anime series I've seen with an hour long format. Gives them a lot of time for developing the two leads.
