The theme to The Mission by Ennio Morricone was one of the most beutiful peices of cinematic music I've ever heard. Other than that i would have to say I'm partial to the soundtracks from Indiana Jones and JFK.

It's really spectacular if you get to see it on the big screen. Back in the 80's one of the old theatres in Halifax (NS, Canada) was converted into a gay bar. They took out all the seats and terraced the floor but left the big screen and projector in place. Every year they would have a RHPS screening (midnight on Halloween, I think) and the place would be packed with people from all over the province (guys, girls, gay, straight) dressed in costumes from the movie. It was difficult to follow the dialog (particularly the narrator) because of all the yelling from the audience, but it was one heck of a spectacle.
