I suspect that Vincent would have been using some unsaturated oil such as linseed for his oil paint, this will "dry" not by evapouration of solvent but when the oil is oxidised by the air. If you try to use a saturated oil such as car engine oil, bicycle oil or the oil for sewing machines then the paint will never dry.

I have heard about the use of egg white but I have no experience of using such paint. I know that if you stir violently eg white that the protein undergoes a chemical change. Golbular proteins can be denatured by violent stirring, and that occurs when an egg is wisked. The protein in egg white is very sulfur rich and I know that one old treatment for people who have swallowed mercury compounds is to feed them an egg white. This is becuase the sulfur in the egg white protein will lock up the mercury and stop it being absorbed by the human body.
