What is the best upgrade path from XP to Windows 7? It sounds like a hassle because you can't do an in-place upgrade. I know that a clean install is always the best route but it is such a pain to transfer everything over.
Would it be a big mess if I went from XP->Vista->Win7? (Yes, I have Vista, doesn't Vista let you use it for 30 days before forcing to activate?)
Can I dual-boot XP and SLOWLY upgrade windows 7 with all the apps and files I need?

1.- dump XP computer
2.- buy win7 computer

I'd dual boot. Once you get used to Windows 7 and have all your files from the XP partition, you can wipe out XP.

A fresh install always seems to beat an upgrade. I would think a double upgrade would be a hell of a mess.

Fresh install and copy your data over. It may be a hassle, but it will come out much better in the end.
