The current ipad and other similar tablets do NOT have the ability to let you take notes IN class. The touchscreen technology is not up to par to the task. This applies to both handwriting recognition and 'typing' notes.
I have an Ipad and I do use it for college... but not to take notes. I use it as an e-reader (I buy the class textbooks as e-books), as a mobile internet device, as a calendar/reminder, music player, movie player (netflix yay!) and to record the class lectures so I can review them later if I need to.
I also have a really cool app that lets me access my desktop at home from my ipad. It literally 'streams' a video of what's on my desktop's monitor and 'relays' my keyboard and finger/mouse commands to the desktop over the internet. This lets me be anywhere with a wireless internet connection and always be able to use WORD, video editing software, photoshop.. or any other software my desktop runs... from the Ipad.
Very handy for college.
But a note-taking device it is definitely NOT.
Now, as to which Ipad to buy... buy the cheapest one. The Ipad 2 that is coming out would be the best choice since it has dual cameras. Get the wireless only, least expensive one.
Why? Because you dont need more GB than what the basic Ipad comes with. The applet I run to access my desktop will LITERALLY give your Ipad the same hard disk space you have in your home computer. Any pictures, video or music you may take daily with the ipad can be downloaded easily into your desktop through that app.
So yes.. My weenie Ipad 1 with 16gb is really a 2terabyte one
