Try to find out, for all of them, present and projected supply and demand. Think of how good you expect to be, compared to others taking the same sort of course, and to be on the safe side, assume you'll be a bit worse. If you expect to be in the top 10%, do your calculations under the assumption that you might only end up somewhere in the top 20%, but it might be the lower end. Compare that to whether you need to be in the top 5% to get a job in the field, or the top 50%, or whatever.
For the courses that steer you into a research career, don't expect money, fame, babes or short working hours if you make it. You will have to be motivated by an interest in your field. If you have that and you get into research, it's a good choice.

Having only taken some very basic physics courses I'm not sure I'm qualified to advise. For what it's worth, I think these two courses would prepare you mostly for a research career, especially particle physics. I have never heard of any job for particle physicists outside of academic institutions. I expect you would learn skills transferable to other jobs, but you'd have more of that from the combined maths/physics.

I think both of these need people skills, journalism for building up and maintaining a network of contacts and for interviewing people, law for persuading a jury, if you end up as a trial lawyer, or for negotiating, if you end up as a corporate lawyer or something like that. People skills are not often the strongest point of members of this board, but I don't know how things are with you.

Of the science-oriented options, that seems to be the most versatile, but that flexibility also means you will have to think more about what you will do with your qualifications once you've got them. It's easy to see where an aeronautical engineer will apply for jobs. With maths and physics, you could end up doing anything from analysing stock markets to designing prosthetic limbs.
