(∩_∩) looks like smiling with your eyes. It might mean a "deep and relaxing" happiness but don't quote me on that.

O(∩_∩)O is either the above really odd ears or throwing your hands up in celebration. probably the second (kinda contradicts what I said up top ;) )

I have no idea what the ~ means.

That design most certainly is Japanese and not Chinese, no offense :) The N_N sign is always one of pleasure or content in these instances.
