Very few, though I have liked a surprising number of third films in series, eg. the third Bourne film; the third Indiana Jones, the third Harry Potter, ( which is the only one I really like ), the third Jurassic Park, ( much better than number II ), but sticking to second ones:

Batman Returns ( I prefer it to any of the others, even the first one )
Aliens ( I almost prefer it to the first one )
Addams Family Values ( I definitely prefer it to the first one )
Asterix and Cleopatra ( the one directed by Alain Chabat, the second in the french series )

Can't think of any others right now!

I actually liked Home Alone 2...although the big complaint from many has been that it completely rehashed everything from the original. But this one of very very very very very few cases where repeating everything from the original film (story and joke structure) actually works and makes sense to me. I never had a problem with it in the case of this film.

Home Alone 3-5 however are sequels whose existence I refuse to acknowledge.

The Two Towers (if that counts, it really was just the next part, but technically it's a 2)
Spider-Man 2 (which I prefer to the first one)
An odd one is Finding Neverland. It's a 2 that came decades after the first and takes huge artistic license but it's a pretty good lil movie. I did not expect to enjoy it when I took my kid to it.
Toy Story 2 - as one of the most noteworthy, to me, because it fits the "Hey, this went well, lets make another" pattern and yet in no way falls short of the first. Trust Pixar to be able to pull that off.

I don't consider The other parts of The Lord of the Rings films to be sequels. Because they filmed them all at the same time as one big movie. It was the only time a studio did something like that I think. If they did part one, then decided to make 2 and 3 after then It have been a sequel.

Chronicles of Ridick, it is the sequel to Pitch Black and are both movies I like.

Terminator 2 is a classic.

Aliens is is pretty good with multiple Alien.

And I guess to agree with others I do quite like Toy Story 2.
