"The Patsy" from 1964, because there's NO ending per se. Jerry Lewis and his cast simply stop acting and leave the set.

FFVII Advent Children Complete had a great ending [I only watch it in Japanese, by the way].

Spirited Away [although that ending is more bittersweet than most]
Howl's Moving Castle

Star Trek IV [also known as the one with the whales]

The Return of The King [extended edition; the ending still makes me cry, though]
