It's very enjoyable but not "you must watch this before you die!" enjoyable.
I recommend trying Stargate SG-1, Stargate Atlantis, Buffy, StarTrek Enterprise these shows are very good on character development it builds up like an rpg game. The story is mostly the best in the Stargate though.
This might sound oddly but the Stargate shows has helped me to socialise more of learning more facial expressions compared to what I knew before.
The Sopranos.
I like the character development, psychology and social psychology. I like to learn what the characters really think and feel because they lie most of the time. I take things very literally so it is fascinating for me to try to understand characters that don't mean what they say.
It is interesting to see how they communicate threats and dominance. The family dynamics seemed spot on.

I'm not far behind you although I have other obsessions as well as TV
Most of my all time faves are in your list ...A to Z Boardwalk Empire ( apart from the last series ) , Breaking Bad , Dexter , Game of Thrones , The Sopranos , The Wire .
I'd add Mad Men ( ( last series aside ) , Vikings and a few more .
My fave TV of all time has to be Peaky Blinders though . ( based of real life characters , situations and events ) although there is a lot of poetic license thrown in there of course . Like Boardwalk Empire did supposedly ).
True Detective series one or two incidentally ??
I'm going to say I' Claudius. It's about the fallout from the machinations of Augustus' wife Livia as she attempts to clear the line of succession for her son, Tiberius. The show is full of suspense and humor, and even enters horror territory frequently, particularly when Caligula enters the stage. It stars many of the greatest Shakespearean actors of the day, many of those have also been prominent in fantasy and sci fi in the years since.

Greaves' Claudius was also an inspiration for Tyron Lannister. Dinaklage even seems to have based much of his character's vocal inflections on Jacobi's performance.
That show was so great that even my NT friends back in junior high tuned into PBS to watch it.

Too many that entertained me. I'll put those that were a renewal of great surprises or that were multi-dimensional interesting (considering I still have a lot to watch):
Gossip girl
Ghost whisperer
Smallville
Mutant X ...
Kidding
The x-Files
Battlestar Galactica
Dr who
Six feet under
House MD
Oz
Cold case
and
Sherlock
Hannibal
Dexter
The Sopranos
The fall
True detective looks good (just started)
Breaking bad
Homeland
Orange is the new black
Millennium
Skins
Mad men
Twin peaks (Denise Duchovny, why won't you love me)
Luther
The good wife
Game of thrones
The Tudors
The closer
Without a trace
What a nerd. Open to suggestions particularly on new shows running. Or not. I need my fix.

I have a little list: Sherlock, Doctor Who, Digimon [especially Adventure and Tamers], and Star Trek.

I also recommend Fargo, True Detective (first season), Game of Thrones, and The Walking Dead.
Another I'll recommend is Trailer Park Boys. Why? It's a better version of It's Always Sunny in Philadelphia (another great series). Great acting, and good, believable yet hilarious dialogue.

Great choices but you've missed the two best
The Wire BoxSet
Peaky Blinders series 1 & 2 . ( series three coming soon )

Yes! Trailer Park Boys is my favorite. It's so low brow in the best way, yet somehow has it's own weird sense of wit. The characters are really great and likeable. Not the most brilliant thing in the world comedically, but it just works so well. Between the interplay of the characters, the subject matter itself, and the style of the show itself, there really isn't anything I've seen like it. I love the mocumentary style, but they got rid of that the last three seasons that came out on Netflix.
But it's vulgar, childish and filled with liquor and weed, what's not to like?
Twin Peaks.
Writing as someone who is frequently disconnected from reality, Twin Peaks is an excellent representation of what my world feel likes. I still believe it's the most original TV series of all time.
