My my...let me see...

Negima is good, both the currently-in-production OVA and the regular.

Hellsing Ultimate for the raw violence and awesomeness.

Kiddy Grade for it's darkness and light.

Witchblade for the comedy and violence and sadness.

Desert Punk for some of the best laughs this side of Orion.

Melancholy of Haruhi Suzumiya for more great laughs.

Shakugan no Shana for cuteness and awesome violence.

Mahou Shoujo Lyrical Nanoha/ Magical Girl Lyrical Nanoha/ Nanoha A's/ StrikerS. Not like most magical girl animes. Very well done. Dub sucks juicy donkey balls so go with the sub. Movie is in production now.

Fate/ Stay Night for the utter awesomeness of it all.

Nadesico for the parody of mecha animes

Ah! My Goddess for the sure kawaiiness and naivete.

Trigun for the just the awesome "OMG!" moments.

My favourites at the moment are -

Naruto
Death note
D grayman
Claymore
Bleach
Vampire night
Joujou romantica ( yaoi)

Also there's always the studio Ghibli stuff - spirited away etc
Or some old classics - astoboy, Akira, ghost in the shell, Trigun
Oh, and madhouse - the girl who leapt through time is pretty good :D

I havent seen that yet, though its not under Lolicon in ANN, though I know if you are a lolicon fan their is Macademi Wasshoi! some funny otaku moments and choice of censor aswell as pleasing graphics, music and alright story. Or could be considered forbiden one Kodomo no Jikan, kind of funny censor, interesting music, and would probably be considered illegal by more then a few countries., for its sugestive moments.

If your interested in some more mature ones (not pornographic). There is Sayonara Zetsubou Sensei (Goodbye Mr Dispair), a surprisingly funny especialy since the main character is a teacher who is alwaysd in dispair and quite often threatens or attempts to hang himself. He is countered by one student who is total opposite, aswell as probobly the most misfit problomatic class ever there is the shut in, perfectionist, stalker, fan girl, qiuite girl, extreme normal, refuge, dual personality and bandage girl and a few with twists. The show buzzes with satire, humour, theorylogical thinking and paroadies. heres a taste:

Another good one is Spice and Wolf, though it is often about the economy and trading in their medievil, it is very entertaining and the plot can get you to think to understand the basics in old trading. Also including aoften witty entertaining dialouge between the traveling merchant and his new partner; the wise, self centred but kind Wolf deity he picked up, very funny without having to go out of its way. I personaly can't get over its stylized catchy end theme named 'wolf whistle'.

Lucky Star - This is not a fantasy setting, but it is incredibly hilarious. It's been described as Seinfeld meets Peanuts meets LSD.

Omamori Himari - This is not an anime, but is a great option if you ever decide to try manga. (Edit: Oh, and only the fan translations exist, IIRC. Also, beware the fanservice)

Haruhi Suzumiya - I really prefer the novel. ...They actually toned down the attempted sexual assault scenes for the anime and manga. The novel also follows the anime and manga cliches less.

Other than that, I don't think I have anything to add to the list already presented here.

Lucky Star and Haruhi are both animated by Kyoto Animation , as I wrote before have some very good anime. Lucky Star is funny, though some of the punchlines (not that their always is one) may require a bit of knowledge of Japanese culture and that the otaku culture, though can also teach you things about their culture, I am excited as the second half is being released in Australia on the 24th. Also Haruhi has also started their second season, mixing the new episodes within a rebroadcast of the old ones, curently been two.

Sorry, I didn't notice you mention HS, and I never know who does what animes, but I do think I recall hearing that LS and HS were done by the same company.

Right, as far as descriptions go, LS and HS have been mentioned and Bradleigh did well in summarizing each, but I suppose I should've mentioned more about the animes, but here's something for Omamori Himari:

Yuuto's parents died when he was young (I believe 8?), but luckily, his friend, Rinko, has been taking care of him. The series starts on his 16th birthday, when he is confronted by a young lady, named Himari, claiming to be his sworn protector. She also happens to be a samurai cat spirit. Or something like that. Apparently, the charm that Yuuto's grandparents gave him wore out on his 16th birthday, which was when his demon hunting powers were supposed to awaken.

Apparently, his demon hunting power is primarily to be able to make any female demon want desperately to get in his pants.

It's actually really hilarious, and the story is not terrible either. Most people, though, apparently read it because of the massive amounts of fan service that seems to show up every half page or so.
