Batman: The Animated Series

SWAT KATS: The Radical Squadron - Too violent my arse! Season 2 had excellent animation, a great voice cast (Frank Welker as Dr Viper FTW), and decent episodes. They had a 3rd season ready, but then came the cancellation. Ted Turner should burn in everlasting hell.

Now and Again (ended on a bloody cliffhanger)
Better Off Ted (really had great potential)
Sports Night (I can't imagine how this ended after only 1 season. Cast had such great chemistry)
Martial Law (Samo Hung is da man!)

And to whomever asked, yes, Boston Legal was cancelled, or at least planned to end, but they did have a proper final episode.
