I can offer some good ones, perhaps you could tell me what you like but I will give you a few general good ones.

A great one is Shinryaku! Ika Masume (Invade! Squid Girl) a recently released series that is incredibly funny, only subs at the moment, but even if you have not watched a series in subtitles this would not be a bad place to start.

My favourite current airing anime is Kore Wa Zombie Desu Ka (Is he really a Zombie?), it has zombies, necromancers, magical girls, chainsaws, vampires, ninja, strange evil animals and it is funny, sweet, action, random and sometimes sexy.

Azumanga Daioh is a modern classic anime, not much of a plot, but the characters really make up for it.

And the manga Yotsuba&! (Yotsubato) is a manga by the creator of Azumanga and is a really good read for fans of the anime.

Spice and Wolf is another good one, the difference of this one is that does not need to use cool battle scenes or cute/cool characters, it brilliance is in it's plot and dialogue, be ready to follow the deeds of a travelling merchant and his recent companion a wolf deity. It is the series that can make medi-evil economics sound interesting, and the character interactions between Holo and Lawrence as amazing, also got a recent english dub that I aprove of. There is some nudety but it is done in a non-erotic way and I hope you have the maturety for it not to get in the way.

The Melancholy of Haruh Suzumiya is a very popular series where figureing out the setting is half the fun, watch the trailer to see if it doesn't interest you.

Lucky Star is considered an otaku anime with a chibi style, lots of random conversations about well the sort of stuff in the trailer, also like the dub.

Starship Operators - rather realistic starship combat anime.
Banner of the Stars & Crest of the Stars - another rather realistic starship combat anime
Melancholy of Haruhi Suzumiya and Spice and Wolf (posted above) are rather good.
Zippang! -SDF Aegis class destroyer gets tossed back into WW2.
Code Geass was also rather interesting.. even if its the done-to-death mecha fest.

Lupin the Third series- i love this series.. its just fun to watch.
Irresponsible Captain Taylor - big space war and the universe's luckiest moron in charge of a warship.. bwahaha.
Strike Witches - rather funny though disturbing fanservice
Stellvia of the Universe- a girly anime with mechas thrown in but set in a very good background story and plotline & space sci fi stuff.
Library War - a very unique and original storyline. :)

Gundam (I would suggest X, 00, or almost anything in the Universal Century).

Dance in the Vampire Bund.
And if you can stomach controversial topics, Ore no Imouto ga Konna ni Kawaii Wake ga Nai (abbreviated OreImo).

Didn't think I would hear other people recomend some the shows like Oreimo, Dance in the Vampire Bund or Highschool of the Dead. Well Oreimo had some really good side characters though the sister is mostly a nasty piece of work, HOTD is like the ecchi anime version of an American zombie movie with the novelty alone having people calling for more, and Vampire Bund is a pretty kickass vampire anime although some might be turned off that the badass vampire queen who runs around a lot in her underwear look like a child. Index/Railgun are also good, nice action and such but what I really like about it are the characters, I especially enjoyed the recent parts involving Misaka Imouto and Last Order.
