Hi Blampied,
Welcome here at WP, I hope you find what you are looking for.
A bit curious, is your study aiming at attaining certain functions within public services?
I'll try and give as much details as I can:
It's mostly theory now, but we've done drills, first aid situations, even experditions (e.g. being sent into a random location and trying to find your way back to the camp).
One of my units (Which is classroom and assignment work) does command and control where we find out about different types of leaderships and teams, what is important about teamwork, briefings, debriefings, sharing ideas, making sure everyone understands the tasks that have been given out.
Much of the work we do links to the everyday duties that any man/woman would be doing in any of the uniformed services, we don't of course get sent to do stuff like walk the beat, reponse to emgergencies, etc. but we learn how to carry out such things. You not only learn how one service works, but you'll know how each and every service works, what proceedures they have to carry out and this can be really helpful as there are times where more than one public service.
We also get visits from many public services (also certian units from a particular service) at the college and they give us talks about some seriuous issues and/or tell us about their carrer is like, the demends of job, what you will expect to face. Recently, we had the armed police to give us a presentation on repica weapons and how very misleading they can be to anyone's eye).
Phew, sorry about the wall of text, but I wanted to make sure that I've given a suitable answer
