I've seen a few members with an image in their signatures. Does that mean we can have images in our signatures, even though the rules state we can't?

I would suspect that you may not.

I've noticed that people use BBCode/HTML in their sigs as well. Isn't that coding?

I don't think so. I think that was a protection against active scripts, not that any should be able to run on top of the BBS software. Wouldn't be certain though.
