Could someone explain how this works? I know GMT stands for Greenwich Mean Time, but isn't this "timezone" located in England, and wouldn't my time (EST/ east coast USA) be -6 hours since I am 6 hours behind England (I think?). Why do I have to select -4 to get the right time to appear? Does this take into account daylight savings time, and if so, why would it be -4 as opposed to -5?

Could anyone explain this clearly to me?

If I remember right, EST is GMT-5. If you have to set it to -4 (I think I had to do the same) it is because it hasn't taken DST into account. I can't remember what the change was that happened this year, but if the "old" DST hasn't occurred yet, the cause could be software that wasn't modified for the changes made this year. You may have to set it back to -5 after the "old" DST passes.

What time is it in england right now? Here it is 8:51. Is it 2:51 pm there now?

The current time in Britain is GMT+1. GMT refers to the winter time (before the clocks went forward) - it does not change scale throughout the year. So you are on GMT-4, east coast US being five hours behind Britain.

I don't get it, there's no Adelaide time.

At the time of my writing this post, it is 10:31 in Britain. That is British Summer Time.
It is however 9:31GMT. The time is also 9:31GMT in Australia, at the north pole and on the surface of the moon.
The time in Adelaide for your profile will be GMT+(1+however many hours Adelaide is currently ahead of the time in England.)

Apatura: Britain will be back on GMT(+0) when OUR clocks go back at the end of October. You need to change your profile back to GMT-5 when YOUR clocks go back.
