I've done this a few times.

This last job though, I was fired from which was a surprise. My boss didn't even have a good reason. I believe he is adult ADHD. I was really upset and started crying, he told me that is why he let me go because I cannot handle the pressure. I was able to handle it until this happened. I cried because I bent over backwards to prove myself to another very erratic person only for them to basically tell me they didn't understand me/I was "weird"

I quit an order-pickers job after a fellow employed me threatened to kick my butt after work. That was 35 years ago.

I thought about it with my last job, but they laid me off before I had the chance to do so. The reason is that they kept cutting my hours, and the way they laid me off was to quit scheduling me. If they had just told me up front that I was laid off, I would have quit calling to see if I was scheduled because I was worried about being fired for not showing up when scheduled. I found out that they did a similar thing to someone else with a disability, so it wasn't just me that was laid off that way.

Yes, this is a VERY common thing employers / management do to get rid of someone who's "special".
I suppose you could take it to an employment tribunal for constructive dismissal, but seems unlikely you'd get far :(
