I'd like to take a degree in natural or technical science but I also know that I'd be more content in a high pressure/fast pace type of job.
Or possibly a job where I have to have control over several projects or situations at once. I like the feeling of co-ordinating several efforts and pulling them together.

But I am stumped as to whether something like this exists and where I can find it.

It exists.
I know someone that's lead of a team of a bunch of people: Engineers, scientists, computer programmers....etc.
He organizes them so that they can get a specific project done, or more than one project at once, if need be. He has to know a little about every field - except for the programming part where he just needs to recognize efficiency and talent and reward/promote the helpful people in a way that benefits the overall project. In addition to being incharge of a team of about 40, he's also doing other projects on his own and he has to report to HIS bosses. He regularly does physics, math, matrix manipulation, some chemistry, and even gets a few design ideas from biology -biomimetics is where the best ideas are at! :D

He works for the military/govmt, by the way. I dunno how you could go about getting a job like his there. But I'm sure that there are many other jobs similar in pace to it.

Maybe teaching too? If you really devote yourself to it, it can be fairly fast paced.

Sorry I'm not too helpful - I'm thinking about what I want to do with my science degree too. (:

Naw, you're plenty helpful.

Right now I'm in a program that is a little bit of everything, IT, psychology, language. So I guess I could end up as that sort of middle person, but in those fields. But honestly I'm more interested in physics ect.

I'm good at teaching others, but I'd lose patience too fast.

Also, biomimetics is awesome, thanks for introducing me to that word for it.

I know, right? It's a great word. (:

I like the theoretical sciences too... Grad school is where I'm off to after I get my biochem BS. I'm gonna do most of my serious worrying about specific career choice once I'm in there. First steps first, right?
