Breaking into the culinary industry

I have been watching competition cooking shows very intently recently(in fact I would say that this will be my next obsession. I've already watched the current season start to finish twice and have been taking notes about the style I see). I am wondering where I can break into the industry without losing credibility. I don't want to go to the lame schools that advertise on "Maury" and I don't want to have a degree I can't use when I graduate. So do you have any suggestions?

Interesting thought. I wonder if there is the culinary equivalent of Trade Schools? More focused on skills and hands on work in a shorter time period and probably less expensive.

I have a bit of an affinity for all transportation industries and also a fan of cooking shows such as Iron Chef(Japan). I myself have considered what it might be like to get work in a galley on board cooking and traveling.
