What exactly does this mean?

I know you get more specific jobs in the financial sector - accountant, broker, trader, auditer.

But when some says they work in finance, what the hell does that mean?

In my community, it means they are the janitor at a Finance firm.

It could mean they don't expect you to understand their job title.
Or it could mean that they know that jobs in finance arent renowned for being exciting, and they'd rather not go into too much detail, and they think you were probably only asking out of politeness anyway.
