My career goal is to be a forest ranger, a park ranger or a game warden or one of those people who work in the fish and game fields.

How would one go about getting to be one? What courses should I take?

I think you want a course of study in Forestry and Agriculture. I don't know if many schools offer it, though.

Completion of a full 4-year course of study leading to a bachelor’s degree with a major study in natural resource management, natural sciences, earth sciences, history, archeology, anthropology, park and recreation management, law enforcement/police science, social sciences, museum sciences, business administration, public administration, behavioral sciences, sociology, or other closely related subjects pertinent to the management and protection of natural and cultural resources.
