How about turning to other countries (I take it you're from the US) for inspiration? Many cultures don't eat eggs for breakfast, for a variety of reasons: climate too hot for fresh eggs, terrain unfitting for chickens, eggs never took hold in society, religious taboos, etc. Instead, there are other foods they eat. Consider the following. (Fish is a common option; brush teeth afterwards to eliminate bad breath at school.)

Ashkenazi Jews: bagels with lox and cream cheese. (You can use the good kind, or just trimmings for $2.99/lb.)

Israel: herring pate (mashed canned sardines will do) on buttered bread, accompanied by feta cheese cubes.

Sweden: Kalles caviar spread on buttered Knackerbrod crackers. (Get it from your local Ikea.)

France: ham and cheese on a croissant.

Italy: sweet pastry with Nutella.

United Kingdom: the usual English breakfast, minus the fried eggs. (If your son can handle black pudding.)

Germany: braunschweiger (liver sausage) on buttered bread

Mexico: sopes with meat, cheese, and vegetables

Protein will help keep him from getting hungry before lunch.
- yogurt (you can throw berries, granola, whatever into it)
- nuts (on their own or mixed into cereal)
- meat (lunch meat with cheese on toast is easy, and the cheese also has protein)
- peanut butter (on toast, or as a dip for fruit slices)

I'm surprised Italians eat sweet pastries with Nutella, pastries are sweet enough alone.

I like to take whole grain (wheat, oats, barley ), soak it overnight in hot water, and then microwave it in the morning to warm it up. Pour some cream on it and add cinnamon and honey.

That is the *only* way we make bacon any more. And if you can cover the entire baking pan with foil, cleanup is minimal.


Other protein sources:
Yogurt
Oats with bacon crumbles.
Quesadillas
Cottage cheese
Avocado


Borrowed & modified from the web:
1 C. non-quick oats
1-1/2 C. unsweetened vanilla almond milk
4 Tb peanut flour
1 scoop vanilla protein powder
cinnamon, cocoa etc. as desired for flavor.

Mix together in a bowl and store in the refrigerator overnight. No cooking!
Jam, jelly or fruit on top when served. Also works good in individual-serving containers.
