I'm technically not qualified to post on the Parent's Discusssion since I'm not a parent or a 'childrens' :D
but I've posted here GFCF recipes since some have requested better GFCF recipes that do not taste like cardboard! And I've vowed to post GFCF recipes for you.

This one is directly from 'Autism/Asperger's Digest Magazine' January/February 2009 issue with Veronica Zysk, editor. Page 29.
Perfect for Valentine's Day; No Bake Brownies.

No Bake Brownies

18 - 20 Medjool dates, pitted (Lab Pet adds the mean value is 19 Medjool dates)
1 Cup raw walnuts
1 Cup puffed rice (or another GF puffed grain cereal)
1/4 Cup cocoa powder
1 teaspoon vanilla extract
1/4 Cup organic cane sugar (You can try Raw Sugar too)
1/4 Cup chocolate chips/nibs (or carob chips)
1 teaspoon coffee crystals (You could substitue decaff coffee crystals)
Pinch salt (Lab Pet thinks this equates to X < 1 cc. NaCl)
Optional: 1/4 Cup sliced almonds

Put ingredients (except the chocolate chips) into food processor (with the lid on!)
Process until smooth. Pulse in the 1/4 Cup chocolate chips.
Press mixture evenly into oiled 8" X 8" pan. Top with 1/4 Cup sliced almonds.

Cut into individual squares or use a heart-shaped cookie cutter.
You can place brownies into a gift-box for Valentine's Day - appropriate for anyone!
