UMBREON for the win!
Every time I play Pokemon XD: Gale of Darkness (and come to think of it, that is very often), it is always the Moon Shard that I collect from the sailor. I like having UMBREON in my party because he is a reliable tank alongside a powerhouse such as URSARING.

I like Eevee left as itself, a normal type pokemon. The move headbutt that it can learn or be taught if needed is a favorite of mine. I also like how hardy it is. However, I like Espeon too for its good special attacks. In the purely visual sense I love Umbreon X)

My faves are Espeon and Umbreon, Leafeon, Flareon (fluffy!), Glaceon, Vaporeon and Jolteon. Wait, that's all seven of them....

Yeah but Glaceon is still top in my book I always wonder what animal is Eevee based on?

I think Eevee is based on the Fennec fox. It might have something to so with legends of Kitsune (japanese fox, Ninetails fits the legend of nine tailed Kitsune) being able to control elements or you could imagine each evolution being a seperate tail, though that would mean there is probably another two to go.

I've always liked Vaporeon the best, with Glaceon coming in second.

Jolteon's speed and special are so absurd. I could beat any version training nothing but a jolteon..

Espeon's really nice itself, too.

I like Glaceon. But they're all kind of nice.

Judging by the pattern, I think there are still twentyone or more fitting base stat configurations. More than enough to cover the remaining ten types. However, I don't know if the nine formerly physical types will be used.

Vaporeon!

Water absorb owns!

I vanguard my double-battle team with the vaporeon brothers.

Torrent, the eldest, has lower special attack, but all his other stats are higher. his moves are:

Surf
Brine
Aqua ring
Acid armor

Tide, the younger, has higher special attack, but all his other stats are lower

Surf
Ice beam
Aqua ring
Mist

It is very hard to take down the vaporeon brothers when they keep healing each other with surf.
