Shovel Knight is one of the best platformers that I've played in a looong time. But yeah, it can be a little intimidating if you're not used to play games that offer this kind of challenge (it is not that hard, but if you are not used to how things work there you will have to be patient during the first levels).
And if it is making you feel that upset you are right, you should just skip it. Even though sometimes it is worth to insist and try to get better, games should make you have fun and if they're not them there's something wrong (in this case the game is not your type of game).

I didn't know you could get a refund, I thought all sales were final.

You can, on Steam, but it's very limited. If you've already spent like, 6 hours on it or had it for too long, then no, you cant get a refund. Which makes sense, for a digital product.
